A professional mixed martial artist since September 2020 and representing Gilbert Grappling under head coach Danny Gilbert, Jose Perez holds a 9-1 record in 10 contests comprised of five decisions and four submissions. He has fought for Cage Fury Fighting Championships and PFL MMA. Perez has spent his entire tenure as a professional MMA fighter in the United States. He is 1-0 under the PFL MMA banner. All of his finishes over the course of his journey as a professional mixed martial artist have been inside the distance.

In his professional MMA debut and promotional debut under the Cage Fury Fighting Championships banner at CFFC 84, he faced Brandon Gaitor and tapped him out via rear-naked choke in round one. Perez also submitted Jacob Dorman via banana split in the first round at CFFC 91. He defeated Nicholas Maupin via unanimous decision at HR MMA 117. Then at CFFC 97, Perez tapped out Jaleon Reid via rear-naked choke in the first round. He defeated Isa Dalipai via unanimous decision at CFFC 102. Perez defeated Paul Capaldo via unanimous decision in the co-main event of CFFC 105. He submitted Frank Wells via rear-naked choke in round three in the main event of CFFC 112 to lock up his fourth submission win as a professional. Perez defeated Chris Vasil in the main event of CFFC 123 via unanimous decision.

In his debut outing under the PFL MMA banner at PFL 9, he defeated Jessie Stirn via unanimous decision to score the fifth decision victory of his professional career along with his first win under the PFL MMA banner. He also picked up his ninth victory inside the professional ranks in the process.
